Nitrates in carrots, beets and other root veggies can't be processed by a baby's tummy before 6 months, possibly before eight months, and cna therefore cause Blue Baby syndrome, which can be fatal. While commercial manufacturers can't remove nitrates they can screen for them in a way that parents can't, so their carrots don't have dangerous levels of nitrates.
