Ways to serve yellowtail

Hey, can you get slabs of sushi-grade hamachi or tuna where you are? If you can, or if you have another source of really fresh saltwater fish, I can send you one of the packets of poke mix that a friend brought back for me from Hawaii. That's 'poke' pronounced Hawaii style, "poh-kay". It's like ceviche, but with Hawaiian salt and kukui nut and lots of crunchy ogo seaweed.
