I was just about to apologize for posting even yet still more pictures - particularly another picture of our dinner. Then I realized that I don't actually know whether people consider that apology-worthy or not. So, a poll about your photo posting preferences:

Without further ado, behold a picture of dinner:

This is another recipe from the latest issue of Gourmet. (So far, I've scored two for two with my new Gourmet subscription. This bodes well for the year.) It's chicken thighs roasted with lemon, garlic, and thyme. The skin on these babies was absolutely worth the associated increased risk of coronary bypass in a few years. Crisp, delicately seasoned, and delicious.

I spatchcocked a whole chicken last night (hubba! :)) and rubbed a compound butter made with tarragon and lemon zest under and on top of the skin, sprinkled it with kosher salt and ground black pepper, then roasted it at 425F until done. The skin was crisp and delicious, the meat (including the breast) moist and oh, so tasty. And it was as far from "healthy" as it's possible to take a chicken without, I dunno, deep frying it in lard.

These look terrific. I have my issue of Gourmet but I haven't had a chance to read it yet!

I'm making your fish recipe tonight, using red snapper (it was fresh and on sale). I will report later :).

I'd say that even small pictures are okay, even without a cut tag. I've seen some people post reduced size pictures outside the cut and the full sized pictures within the cut.

I certainly haven't found myself offended by your journal, as you've used it, so far. And, at some point, you have to let people choose journals to read based on the content they want to see rather than going to far in tailoring your journal to attract readers. This stuff is important to you, and you're good and bringing things important to you to life, for the rest of us. Go with this strength. Most of us just want to see you write enough to keep us entertained. 8-)

My usual answer to "what shall I post?" posts is "whatever you want", but I can't imagine more pics of food or Alex would be a bad thing under any circumstance.

1. Pictures of anything you want, in any quantity you want, because hey, it's your journal!

2. My personal preference would be single pictures outside a cut; multiple or large pictures behind a cut, but hey, it's your journal!

3. Dang, that chicken looks good.
